Kitchen appliances and ventilation

Appliances are usually treated as the last decision and they behave like the first one. Their dimensions set the cabinet layout, their power demands set the electrical scope, and the hood above the range can quietly become the most consequential item on the drawing.


Why the appliance schedule comes first

Cabinet drawings are built around appliance dimensions. A 36 inch range and a 30 inch range produce different cabinet runs. A built-in refrigerator needs a different opening height, depth and surround from a freestanding one. A wall oven stack has a specific cabinet, a specific circuit and a specific landing space beside it. Door swings determine which side a cabinet can sit.

Change any of that after drawings are signed off and the cabinet order restarts, which on semi-custom is six to twelve weeks and on custom can be twenty. That is the most expensive way to change your mind on a kitchen project, and it is entirely avoidable by settling dimensions, fuel type and ventilation requirements before the drawings go out.

Gas, induction, or both

The change most often considered on this coast is gas to induction, and the practical requirement is a dedicated 240 volt circuit of adequate ampacity from the panel to the range position. That means the panel needs both a spare double-pole slot and the capacity to serve it, which on an older Newport Beach house with a 100 amp service is often the constraint rather than the wire.

The existing gas line is capped off properly at the same time. Where the panel sits on the opposite side of the house from the kitchen, the wire run can be the larger part of the cost. Households usually make the change during a remodel because the walls are already open, and that is genuinely the cheapest moment for it.

Induction also changes the ventilation conversation slightly. It puts less combustion product into the room than gas, but it does not remove the need for extraction, because steam, grease and cooking odour still have to leave, and in an open-plan kitchen they otherwise travel through the whole living space.

Extraction, and the number that changes everything

A hood is rated in cubic feet per minute of airflow. A modest 30 inch hood over a domestic range might move 300 to 400 CFM. A large hood over a professional range can be specified at 900, 1,200 or more.

Air removed from a house has to be replaced, and a reasonably tight modern house cannot supply that volume through incidental leakage. California code addresses this by requiring make-up air provision above a defined exhaust threshold, so a powerful hood arrives with a make-up air duct, a damper and a control interlock attached to the design. That is not an optional accessory, and retrofitting a make-up air path after the ceiling and walls are closed is invasive and expensive.

The practical advice is unfashionable: most households do not need a 1,200 CFM hood. Specifying the extraction to the actual cooking rather than to the appearance of the range often removes the make-up air requirement entirely, along with several thousand dollars and a significant amount of ducting.

Ducted, recirculating, and downdraft

  • Ducted. Air, heat, moisture and grease leave the building. The only arrangement that genuinely works, and the only one worth specifying in an open-plan kitchen. Needs a duct route to an exterior wall or roof, sized properly and with as few bends as possible.
  • Recirculating. Air passes through a charcoal filter and returns to the room. It removes some odour and no heat or moisture. Acceptable in a condo where a duct route genuinely does not exist, and a compromise everywhere else.
  • Downdraft. Extraction at counter level, rising behind a cooktop. It exists because an island cooktop with a ceiling hood spoils the sightline the island was built to create. It is generally less effective than an overhead hood at the same rated airflow, because it is working against the direction heat wants to travel.

The electrical demands

A modern kitchen assumes a specific electrical provision, and a kitchen wired in 1968 does not have it. The California Electrical Code, adopted by Newport Beach in its 2025 edition, requires two small-appliance branch circuits serving the counter receptacles, dedicated circuits for the dishwasher and disposal, GFCI protection on countertop receptacles, arc-fault protection on specified branch circuits, and receptacle provision serving island and peninsula countertop spaces.

Add an induction range, a double oven, a built-in coffee machine and an electric vehicle charger on the same service, and a 100 amp panel starts to look small. A panel upgrade to 200 amps runs $3,000 to $6,500 in this market, more where the utility service drop or meter position also changes. Refrigeration, and the depth question

A standard freestanding refrigerator is around 35 inches deep and protrudes well past a 24 inch base cabinet. A counter-depth unit sits roughly flush with the counter front, costs more per cubic foot of storage, and in a narrow kitchen it is often the difference between an aisle that works and one that does not.

Fully integrated refrigeration, panelled to match the cabinetry, is the most expensive option and the one that most changes how a small kitchen reads, because it removes a large block of stainless from the visual field. Ordering, and the thing that stalls final inspection

Appliances are frequently owner-supplied, and the failure mode is consistent: a final inspection generally waits until everything is installed and working, so one appliance on a twelve-week backorder can leave a finished kitchen sitting on an open permit while the household cooks in it.

Two habits avoid it. Order early, at the point drawings are signed off rather than when the site is ready for them. And check on delivery rather than on install day, because a damaged appliance discovered in week fifteen is a very different problem from one discovered in week six.
